This recipe is high-fat/moderate-protein/low-carb
4 large organic chicken legs
Soak overnight in a zip lock in 2 cups heavy cream with 2 tablespoons apple cider vinegar.
Breading:
2 packages Trader Joe’s Pancetta, well browned and drained. And crushed with a rolling pin to a powder.
3 tablespoons almond flour
3 tablespoons Parmesan cheeseSalt, pepper and paprika to taste.
Dredge soaked legs in breading mixture.
Bake at 400 degrees (convention oven if you have one) for thirty minutes.
Yum!!! Dip in creamy sour cream.
