APB (A Plant Bar) opened on Melrose Avenue in the former Darkroom space in March 2023 with vegan cocktails from barman Julian Cox, featuring only vegan certified alcohol. Cox has also designed a full menu of nonalcoholic alternatives, perfect for non-imbibers looking for a post-work drinking spot. The bar is also home to a permanent residency from Niku Nashi, a completely plant-based sushi concept from Chef Niko Zaragoza, designed to complement the cocktails and mocktails. The collaboration between APB and Niku Nashi is a totally unique experience, designed to fill a void for vegans and non-vegans alike – a place where everyone can enjoy a beautiful night out, no matter the dietary preference. The pristine dining offerings suggest traditional sushi, drawing heavily from Chef Zaragoza’s prolific experience in Japanese restaurants, where he mastered flavor profiles and knifework. APB’s design draws on the plant-forward concept, inspired by vintage greenhouses, complete with trellised booths, bringing to mind a beautiful English garden.
